How to make muffins

Ingredients

  • Yellow Cornmeal - 3/4 cup
  • All purpose flour - 1 1/4 cup
  • Baking powder - 1 tbsp
  • Eggs - 2
  • Butter - 1/2 cup
  • Milk - 3/4 cup
  • Honey - 1/4 cup
  • Sugar - 1/2 cup
  • Salt - 1/2 tsp
  • Method

    1. In a large mixing bowl, mix the dry ingredients - cornmeal, flour, baking powder and salt.
    2. In another bowl, whisk the eggs. Next add the sugar, melted butter, milk, honey and mix well.
    3. Add the wet ingredients to the dry ingredients and mix it well.
    4. Preheat the oven to 350 degree F.
    5. Spray a muffin pan with cooking spray or rub some oil. This will make the muffins crispy around the edges.
    6. Pour enough batter in the muffin pan. Bake for about 20 minutes.
    7. Serve the muffins warm for the best taste.

How to make Channa Pasta


Preparation time: 10 minutes 
Cooking time: 20 minutes + time to make channa masala
Serves: 4-6

Ingredients

  • Channa Masala (Chole) - 2 cups
  • Pasta - 2 cups
  • Salt - as needed
  • Red chili powder - 1/2 tsp
  • Cilantro - for garnishing

Method

  1. Cook and drain the pasta as per the package instructions. Any shape of pasta could be used. Different pastas have different cooking times. I have used small shells pasta.
  2. Heat the channa masala gravy with little extra salt and red chili powder. This is to flavor the pasta. If you do not have leftover channa masala, you can make it from scratch.
  3. Toss the cooked pasta with the gravy and mix it nicely.
  4. Finally toss in the finely chopped cilantro and serve hot.

How to make Paneer Paratha


Ingredients

  • Whole-wheat flour (Atta) – 1 cup
  • All purpose flour (Maida) – ¼ cup
  • Paneer – 1 cup (crumbled)
  • Coriander Leaves (Cilantro) – 2 tbsp (finely chopped)
  • Green Chilli – 2 (finely chopped)
  • Chaat Masala – 1 tsp
  • Roasted Cumin Powder – ½ tsp
  • Salt – to taste
  • Ghee/Oil – to roast the parathas

Method

  1. Take the atta, maida, some salt and mix it together. Add water little by little and keep kneading to form soft, pliable dough. Let it rest for 10-15 minutes while you get the other things ready.
  2. Crumble the paneer with your hands. Mix in the salt, chaat masala and roasted cumin powder. Also mix in the finely chopped green chillies and coriander leaves.
  3. Make lemon sized balls with the dough as well as with the paneer mixture. The above measurement makes about 5-6 balls.
  4. Roll out one dough to a small circle about 3” in diameter. Add a ball of the paneer mixture in the middle.
  5. Gather the edges of the rolled out dough and bring it to the center to cover the stuffing. Seal it and pinch out the excess dough if any
  6. Flatten it with your hands. Flour the surface and roll it out into 5” diameter parathas. While rolling, roll towards the edges of the paratha to prevent the stuffing from coming out. Repeat with all the balls.
  7. Heat a griddle and place the paratha carefully. Cook on one side till small bubbles appear.
  8. Drizzle few drops of oil or ghee. Flip the paratha and cook the other side too.

How to make Mughlai Paratha

Ingredient


For Dough

  • Maida (All purpose flour) - 1 cup
  • Wheat (Atta) flour - ½ cup
  • Vegetable oil - 1 tbsp
  • Salt - ½ tsp
  • Water - as needed

For Egg Mix

  • Eggs - 2
  • Onion - 1/2 of small size onion (finely chopped)
  • Green chilly - 1 (finely chopped)
  • Coriander leaves - about 1/2 cup (finely chopped)
  • Vegetable Oil - 1 tbsp
  • Salt - ½ tsp

Method

  1. Mix all the ingredients for the dough. Add required water and knead the dough. Cover the dough with a round utensil and keep it aside.
  2. Next beat the 2 eggs in a bowl. Add the onion, green chilly, coriander leaves, salt and whisk together.
  3. Make round 6 balls out of the dough. Roll the dough balls into a thin circle.
  4. Heat a non-stick pan. Place the thin dough circle on the pan. Cook both sides on medium flame.
  5. Add 2-3 tbsp of the egg mixture in the middle of the flat thin dough circle. With the help of spoon curve the 3 sides of the dough to give it a triangular shape.
  6. Add 1-2 tbsp of oil for frying. Flip over the paratha gently.
  7. Fry both sides well and take it out.
  8. Repeat for other dough balls.

How to make The Alfred juice



Ingredients:
  • 2 cups Pimm’s No. 1
  • 3 cups brewed black tea, chilled
  • 2 12-oz. bottles ginger beer, like Reed’s or Gosling’s 
  • 1 lemon
  • 1 orange
  • 6 sprigs fresh mint, plus more for glass garnishes


Method:
Wash lemon and orange and slice them into thin rounds. Add citrus, Pimm’s and tea to a large pitcher, stir, and keep in the fridge at least one hour or until chilled. To serve, stir in ginger beer, pour into glasses filled with ice, and garnish with mint and a lemon slice.
Optional: If you’d like a boozier drink, add 1 oz. of gin to your glass before serving, and then stir in the Pimm’s mixture.

How to make The Cat woman juice



Ingredients:
  • 2 oz. bourbon whiskey
  • 1 oz. sweet vermouth
  • ½ oz. creme decassis
  • ½ oz. fresh-squeezed lemon juice
  • Dash bitters


Method:
Shake all ingredients vigorously with ice and strain into a martini glass (or serve on the rocks, if your prefer).

How to make The Mr. Freeze juice



Ingredients:
  • 6 oz. pineapple juice
  • 1½ oz. white rum
  • 1½ oz. blue Curaçao
  • 3–4 blue raspberry Jolly Rancher candies (optional)


Method:
The night before making: Divide pineapple juice between sections of an ice cube tray and freeze until solid.
Crush Jolly Rancher candies with a mortar and pestle, or seal in a plastic bag and crush with a rolling pin or another heavy kitchen tool. Empty “crystals” onto a small plate. Rub the rim of a margarita or hurricane glass with a lime slice and roll it in the candy crystals to coat, then chill glass in fridge or freezer while you blend the cocktail.
Combine frozen pineapple juice cubes, rum, and blue Curaçao in a blender, pulse to break up the frozen juice, and blend until smooth. Pour into glass. Serve with a straw (and maybe a spoon).

How to make The Poison Ivy juice



Ingredients:
  • 2 oz. gin
  • 1 oz. St. Germain
  • ¾ oz. fresh-squeezed lime juice
  • 3 sprigs fresh basil
  • 2 sprigs fresh mint


Method:
Muddle all ingredients well in a cocktail shaker. Fill with ice, shake vigorously for at least 20 seconds (this will help break up the herbs and give the drink its color and flavor), and strain into a coupe glass.

How to make The Joker juice



Ingredients:
  • 3 oz. grape Jolly Rancher-infused vodka (see below) 
  • ¼ oz. lime juice
  • Seltzer


Method:
To make the infused vodka: Unwrap 10–12 purple Jolly Ranchers and put them in a sealable jar or bottle. Add 1½ cups of vodka, seal, shake, and let sit overnight or until candy fully dissolves when you shake the bottle. Chill until ready to use.
Add 3 oz. infused vodka and lime juice to a Collins glass with ice, stir, and fill with seltzer. Garnish with lime slice.

How to make The Boy Wonder juice


Ingredients:
  • 3 oz. orange juice
  • 2 oz. sparkling wine
  • 1 oz. silver tequila
  • Splash grenadine or maraschino cherry juice


Method:
Pour tequila, juice, and sparkling wine into a champagne flute and stir. Tilt glass slightly and slowly pour grenadine down the side so that it settles at the bottom. Garnish with a lime slice.

How to make The Bruce Wayne juice



Ingredients:
  • 4½ oz. black iced coffee
  • 2 oz bourbon
  • ¼–½ oz. maple syrup (depending how sweet you like it)

Method:
Brew a pot of coffee and let chill until cold, or dilute cold-brew coffee concentrate with an equal amount of cold water. Measure all ingredients into a cocktail shaker filled with ice and shake thoroughly, until chilled and foamy. Strain into glass over ice.

How to make Sparkling Apple Juice Cocktail



INGREDIENTS:

    • 1 ounce apple juice
    • 1/2 ounce cognac
    • 1/2 ounce simple syrup
    • 4 to 5 red or green apple chunks
    • 3 ounces champagne
  1. PREPARATION:

      1. Combine the apple juice, cognac, simple syrup, and apple chunks in a cocktail shaker with ice. Shake vigorously and pour into a cocktail glass. Add additional ice, if needed. Top off with champagne. Stir and serve.

How to make The Poison Apple, with Cranberry Juice



INGREDIENTS:

  • 2 oz Crown Royal Canadian Whiskey, or whiskey of choice
  • 1 oz Sour Apple Pucker Schnapps
  • 3 oz Cranberry Apple Juice, or more according to taste
  • ice

DIRECTIONS:

1.  Pour whiskey, schnapps, and juice into a mixing glass filled with ice.
2.  Use a spoon to stir until mixture is very cold.
3.  Strain into a chilled cocktail glass and garnish with a Maraschino cherry.

How to make Vodka Martini with Blueberry Juice



Ingredients:
  • 5 ounces Unsweetened Blueberry Juice
  • 2 ounces plain Vodka
  • Honey or Sugar to taste
  • Ice
  • Fresh Blueberries
  • Sparkling Coarse Sugar for rim of glass

Method:
  • Wet the rim of a chilled martini glass with vodka. Place sparkling sugar on a plate, rub the edge of the glass with sugar to coat. Taste your blueberry juice to see how sweet it is. Add ice,vodka, blueberry juice & sweetener (if needed) to a martini shaker. Shake & strain into sugar rimmed martini glass. Float fresh blueberries on the top of the cocktail.

How to make Margarita with Blood Orange Juice



Ingredients:
  • 4 oz Tequila
  • 2 oz Triple Sec
  • 6 oz fresh blood orange juice
  • Juice of two limes
  • Pinch Sugar or Stevia, optional
  • Salt, for rimming edge of glass, optional
  • Lime wedges, for garnish

Instructions
  1. Rub rims of two glasses with lime wedge. Pour salt onto a plate and spread out evenly. Dip rims of glasses into salt until evenly coated.
  2. Add all ingredients to a shaker, and shake well to mix well.
  3. Fill glasses with ice. Pour margarita into the glasses.
  4. Garnish with lime wedges, sip and enjoy!

How to make Dark 'n' Stormy Cocktail

Dark 'n' Stormy: 



Ingredients: Dark rum (preferably Gosling’s Black Seal), ginger beer, lime.

Starter recipe:
  • 1 part Gosling’s Black Seal rum
  • 2 parts ginger beer
  • Fill glass with ice, add, rum, then top with ginger beer. Squeeze in, then garnish with a lime wedge.


How to make Daiquiri Cocktail

Daiquiri:



Ingredients: White rum, fresh squeezed lime juice, sugar.

Starter recipe:
  • 2 oz white rum 
  • 1 oz fresh-squeezed lime juice
  • ¾ oz simple syrup
  • Combine ingredient in a mixing glass with ice and shake well. Strain into a coupe.


How to make Manhattan Cocktail

Manhattan:



Ingredients: Bourbon or rye whiskey, sweet vermouth, bitters.

Starter recipe:
  • 2 oz rye whiskey
  • 1 oz sweet vermouth
  • 2 dashes Angostura bitters
  • Stir the ingredients with cracked ice, then strain into in a chilled coupe. Garnish with an orange twist or brandied cherry (none of that cheap maraschino bullshit).


How to make Martini Cocktail

Martini:



Ingredients: Gin or vodka, dry vermouth, orange bitters (optional for gin, not necessary for vodka).

Starter recipe:
  • 2 oz gin
  • 1 oz dry vermouth
  • Add contents to ice-filled mixing glass or metal shaker. Stir, don’t shake, for about 10 seconds. Strain into a coupe or cocktail glass and garnish with a lemon peel.


How to make Gin and Tonic Cocktail

Gin & Tonic:



Ingredients: London Dry gin, tonic water, lime wedge.

Starter recipe:
  • Gin (amount to preference)
  • Tonic water (amount to preference)
  • Pour over ice, garnish with lime wedge.
